Hey everyone! I always get annoyed when I go to a recipe page and there is 50 paragraphs before the recipe....so without further ado my Sausage & Spinach Stuffed Shells Recipe.

P.S. Excuse the lack of pictures- these were devoured pretty quickly.

INGREDIENTS:

  • 1 lb ground sausage
  • 1 box dried shells
  • 1 jar of Marinara Sauce
  • 1 bag shredded Italian cheese
  • 1 tub Parmesan cheese
  • 3 tablespoons Romano cheese
  • 15 ounces whole milk Ricotta cheese
  • 3 large handfuls fresh spinach
  • fresh Italian parsley
  • 1 onion; minced
  • Splash of olive oil
  • 3-5 garlic gloves; minced
  • Spices; Italian seasoning, garlic powder, red pepper flakes, pepper

DIRECTIONS:

  1. Start by sauteing the minced garlic and onion in a pan with Olive Oil
  2. Heat a large pot of water on high heat while preparing the other ingredients
  3. Add the ground sausage and cook until browned
  4. While sausage is cooking chop the fresh Italian parsley and add to a large bowl
  5. Once browned; add desired amount of the spices and finish until cooked through
  6. Add the cooked sausage to the bowl of chopped parsley and mix in the ricotta, half the tub of Parmesan and the Romano with the hot sausage until all cheese melts 
  7. Reserve some of the leftover oil in the pan and saute 3 large handfuls of spinach until completely wilted
  8. Add the wilted spinach and spices (pepper, Italian seasoning and desired amount of red pepper flakes) to the mixture and mix until everything is incorporated
  9. Boil the shells in the water according to the directions- but take out 2 minutes early or when the pasta is still al dente
  10. Prepare a baking dish with half the Marinara on the bottom
  11. Stuff each shell by hand and lay in the baking dish; trying to seal each shell around the mixture
  12. Finish by adding the rest of the Marinara to the top and 1 cup of the shredded cheese
  13. Add the rest of the Parmesan
  14. When ready to cook- cook covered for 20 min on 350 degrees then uncovered until the cheese on the top melts completely
  15. These freeze wonderfully and taste even better after frozen!

Hope you guys enjoy!! We ate these with a Caesar Salad and some garlic bread and it made a delicious dinner!
